four year strong has a cover album called explains it all its the only cover album by one artist that i know of but its pretty good.

also punk goes crunk and rockin romance are great cover albums that has popular cover songs by various artists

Strange Little Girls by Tori Amos is a covers album and is reaaally good. I adore it.

My favourite cover album is one Rush did a few years ago called "Feedback." It's only 8 tracks long but the originals were all very good songs and Rush improved all of them.

This kinda only half-counts, but Tomas Kalnoky & Streetlight Manifesto did an amazing cover/re-recording of his Catch-22 Debut, Keasbey Nights.
I'll give a shout to Apocalyptica of course. Good stuff.
I like most of the Across the Universe Beatles covers,especially Fuchs & McCoy's pieces
Garage Inc, of course

Streetlight Manifesto/BOTAR have an upcoming album set called 99 SOngs of Revolution which will be all covers, including "Such Great Heights"

I really can't think of many others...
The Killer's B-Sides album isn't ALL covers, but there are a few in there.

On the 2-disc special edition of Placebo's Sleeping With Ghosts, the second disc is covers. It's rather good.

I think Sea of Treachery should do more metalcore Paramore covers other than just Misery Business. I like their version of the song better.
